Macadamia granola bars

Macadamia granola bars

Ingredients

½ cup honey or rice syrup
½ cup creamy almond butter
2 cups rolled oats
1 cup brown rice cereal
½ cup macadamia nuts, chopped
1 cup dried cranberries
¼ teaspoon sea salt
1 teaspoon ground cinnamon
½ cup dark chocolate chips

Instructions

  1. Preheat the oven to 325 degrees F and lightly oil an 8" x 8" baking dish.

  2. Add the honey and almond butter to a skillet and heat over medium just until the two are melted together. Remove from heat and add the remaining ingredients except for the dark chocolate chips. Stir well to combine and wait a minute or two before adding the dark chocolate chips.

  3. Pour the mixture into the prepared baking dish and use a spatula and/or your hands to press the mixture firmly into the baking dish.

  4. Place on the center rack of the oven and bake for 22 to 26 minutes, until the edges are golden brown. Remove from the oven and allow the bars to cool to room temperature.

  5. Cover the dish with plastic wrap and refrigerate at least 4 hours (or freeze for 2 hours).

  6. Run a knife along the edges of the casserole dish and turn it out onto a cutting board. Cut into bars.
