Chicken and macadamia curry


50ml macadamia oil
1.5kg chicken thighs, skin removed and diced
1 onion, finely diced
2 garlic cloves, crushed
1 teaspoon ginger, grated
½ teaspoon turmeric
½ teaspoon ground cumin
½ teaspoon ground coriander
Pinch chilli powder
500ml macadamia milk
Coriander for garnish


  1. Heat the macadamia oil in a large saucepan or wok.

  2. Sauté the onions, garlic and ginger until soft. Add the spices and cook until aromatic.

  3. Add the chicken and cook while stirring for 5 minutes. Add the macadamia milk, bring to the boil and turn down to a simmer. Cook until the chicken is cooked and season.

  4. Serve with rice, garnished with fresh coriander sprigs.
