Cacao avocado mousse with maple macadamia topping

Ingredients

2 medium avocados (just ripe)
½ cup cacao powder
90 ml agave syrup
½ teaspoon vanilla bean paste
1 handful macadamia nuts
1 tablespoon maple syrup
Pinch of salt

Instructions

  1. Combine avocados, cacao powder, agave syrup and bean paste in a food processor and blend until smooth. Chill.

  2. In a pan over medium heat, add the macadamia nuts and toast for 3-5 minutes, stirring constantly.

  3. Add the maple syrup and salt, and continue to stir for another 3-5 minutes.

  4. Sprinkle over chilled mousse to serve.
